A Velveeta shortage could be a dent in your Super Bowl dip. Kraft is saying we may not find Velveeta cheese at the grocery store over the next few weeks. They didn’t give a reason for the apparent shortage. There has been a commercial on TV constantly featuring a recipe for a chili con queso dip made with Velveeta and Rotel. Now, It’s all I think about and there is a VELVEETA SHORTAGE!
Word on the street is don’t expect to see Velveeta again until February, due to “a plant issue.”

So here is something equally yummy to replace your Velveeta Superbowl Party recipes. My friend April Beaman introduced me to Cowboy Caviar years ago and I have been hooked ever since. It is super easy to make and…GASP…it may even be healthy!
Here is a a super easy and delicious recipe for you to have at your party for the Big Game.
1 (15.5 ounce) can black beans, drained
1 (15.5 ounce) can black-eyed peas, drained
1 (14.5 ounce) can diced tomatoes, drained
2 cups frozen corn kernels, thawed
1/2 medium onion, chopped (use green onions for a different flavor)
1/4 green bell pepper, finely chopped
1/2 cup chopped pickled jalapeno peppers
1/2 teaspoon garlic salt
1 cup Italian salad dressing ( I like Ken’s Lite Italian)
OPTIONAL 3/4 cup chopped cilantro…I love Cilantro but some people hate it…or maybe some avocado..
Mix all the ingredients together. Season with garlic salt. Add dressing and cilantro; toss to coat. Refrigerate for 20 minutes or until ready to serve.
The longer it sits the better the flavors meld.
Serve with your favorite brand tortilla chips.
